- 2 - scallions, sliced
- 1/2 cup feta cheese
- 1/2 cup red wine vinegarette

Step 1In large bowl, combine tomatoes, scallions, cheese, vinegar; mix well. Arrange cucumber slices around edge of plate, spoon tomato mixture onto plate. Season with salt & pepper.
