- 6 - tomatoes, cut into wedges
- 1 - cucumber, peeled & sliced 1/4" thick
- 1 - red onion, sliced, rings left whole
- 1 can kalamata olives, pitted & drained
- 1 cup feta cheese, crumbled
- DRESSING:
- 3 tablespoons olive oil, extra virgin
- 1 tablespoon red wine vinegar
- 2 tablespoons parsley
- 1/4 teaspoon salt & pepper
