  • 4 cups frozen corn, cooked and chilled
  • 1/2 cup red pepper, diced
  • 1/2 cup green pepper, diced
  • 1/2 cup red onion, diced
  • 1 cup mayonaise
  • 1 cup cheddar cheese, shredded
  • 1 cup chili cheese fritos, crushed

How To Make mexican corn salad

  • Step 1
    Combine cooked and cooled corn, peppers, onions, mayonnaise and cheese.
  • Step 2
    Cover and refrigerate 30 minutes or until chilled.
  • Step 3
    Stir in crushed chips prior to serving.
