Here in the South, it’s always nice to have a cool, refreshing grilled chicken salad for picnics, barbecues, or as a main dinner dish at home. Juicy grilled chicken, cucumbers, olives, tomatoes, and Feta cheese crumbles, along with a hearty tricolored quinoa, make the perfect salad for hot summer days. Leftovers can be taken to your workplace or eaten for lunch.

Ingredients
- 2 pounds chicken breast halves, skinless and boneless
- 1 large English cucumber, cut into slice slices then cut into fourths
- 1 can black olives, sliced
- 1 pint cherry or grape tomatoes cut in half
- 1 cup tri-colored quinoa
- 1 cup Mediterranean cheese crumbles
- SWEET BALSAMIC DRESSING
- 1/4 cup balsamic vinegar
- 1/4 cup extra-virgin olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1 teaspoon minced garlic or garlic powder
- 1 tablespoon honey
How To Make mediterranean quinoa chicken with balsamic dressing

Step 1Secure a medium-sized bowl. Add in all chopped cucumber, tomatoes, and olives.

Step 2Rinse one cup of quinoa until it becomes clear using a mesh strainer.

Step 3To a large one-handled pot, add in strained quinoa. Add in 2 cups of water and bring to a boil on the stove, stirring in a teaspoon of salt. Stir until salt is dissolved in the water.

Step 4Boil for six minutes, continually stirring. Securely add a lid and remove from burner.

Step 5Let rest for 15 minutes or more. Remove lid and fluff cooked quinoa.

Step 6Secure a large resealable bowl. Add in warm quinoa. Using a spatula or scraper, push around the quinoa in the bowl and let the steam release.

Step 7Grill seasoned chicken and cut it into bite-sized pieces. Add to the prepared salad bowl

Step 8Add in cut veggies and Mediterranean cheese crumbles. Toss thoroughly to combine everything.

Step 9Combine all of the dressing ingredients into a small mason jar. Shake vigorously!

Step 10Pour balsamic dressing over the top and toss to coat one more time.

Step 11Chill minimum of 3 hours or maximum of 24 hours. Serve and enjoy.
