Great recipe to use up zucchini from your garden. I also love that the salad is heartier than most and can be used for a lunch serving! Prep time includes 2 hours marinating time.

Ingredients

  • 12 ounces bocconcini (fresh mozzarella balls)
  • 1 large tomato, cut into 6 slices
  • 1 medium zucchini, cut into 1/4 inch slices
  • 1/4 cup vegetable oil
  • 1/4 cup white vinegar
  • 1 tablespoon fresh basil, chopped
  • 1 clove garlic, chopped
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt

How To Make marinated zucchini and bocconcini salad

  • Step 1
    Arrange the Bocconcini in a single layer in an 8-inch square dish. Place the tomato slices on top of the cheese; top with the zucchini slices.
  • Step 2
    Combine the vegetable oil, vinegar, basil, garlic, sugar, and salt in a jar; cover tightly, and shake vigorously. Pour the dressing over the zucchini mixture.
  • Step 3
    Cover and marinate in the refrigerator for 2 hours.
