Great recipe to use up zucchini from your garden. I also love that the salad is heartier than most and can be used for a lunch serving! Prep time includes 2 hours marinating time.

  • 12 oz
    bocconcini (fresh mozzarella balls)
  • 1 large
    tomato, cut into 6 slices
  • 1 medium
    zucchini, cut into 1/4 inch slices
  • 1/4 c
    vegetable oil
  • 1/4 c
    white vinegar
  • 1 Tbsp
    fresh basil, chopped
  • 1 clove
    garlic, chopped
  • 1/2 tsp
  • 1/4 tsp

How to Make Marinated Zucchini and Bocconcini Salad


  1. Arrange the Bocconcini in a single layer in an 8-inch square dish. Place the tomato slices on top of the cheese; top with the zucchini slices.
  2. Combine the vegetable oil, vinegar, basil, garlic, sugar, and salt in a jar; cover tightly, and shake vigorously. Pour the dressing over the zucchini mixture.
  3. Cover and marinate in the refrigerator for 2 hours.
