marinated zucchini and bocconcini salad
Great recipe to use up zucchini from your garden. I also love that the salad is heartier than most and can be used for a lunch serving! Prep time includes 2 hours marinating time.

Ingredients
- 12 ounces bocconcini (fresh mozzarella balls)
- 1 large tomato, cut into 6 slices
- 1 medium zucchini, cut into 1/4 inch slices
- 1/4 cup vegetable oil
- 1/4 cup white vinegar
- 1 tablespoon fresh basil, chopped
- 1 clove garlic, chopped
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
How To Make marinated zucchini and bocconcini salad

Step 1Arrange the Bocconcini in a single layer in an 8-inch square dish. Place the tomato slices on top of the cheese; top with the zucchini slices.

Step 2Combine the vegetable oil, vinegar, basil, garlic, sugar, and salt in a jar; cover tightly, and shake vigorously. Pour the dressing over the zucchini mixture.

Step 3Cover and marinate in the refrigerator for 2 hours.
