marinated cucumbers & onions
My husband and I enjoy these by themselves, mixed with tomatoes, or placed on top of a mixed green salad.

Ingredients
- 2 - english cucumbers
- 1 - yellow onion
- 2 tablespoons salt
- 1/2 cup water
- 1/2 cup apple cider vinegar
- 1/3 cup sugar
- - pepper, to taste (optional)
How To Make marinated cucumbers & onions

Step 1Peel & thinly slice cucumbers & onions.

Step 2Place the cucumbers in a colander on a plate. Sprinkle with 1 T of salt. Place onions on top of cucumbers and sprinkle with 1 T of salt.

Step 3Place in refrigerator or cover with plastic wrap and place a freezer pack on top for 2 hours.

Step 4Meanwhile, place water, vinegar & sugar in a small pot and heat until sugar is dissolved. Remove from heat & allow to cool.

Step 5After 2 hours, squeeze as much liquid as possible from the cucumbers & onions as possible. Place in a bowl, season with pepper, if desired, and pour marinade mixture over them. Refrigerate.

Step 6Remove from marinade to serve.
