Very fresh salad from 100 days of real food. Always looking for different things to do with quinoa. Rice or couscous could also be substituted for the quinoa. Adding rotisserie chicken would make it a nice meal instead of side dish.

Ingredients

  • 3 cups cooked quinoa
  • 3/4 cup dried fruit of your choice-raisins, currants, craisins
  • 1/4 cup toasted pine nuts
  • 1/4 cup chopped cilantro
  • 1 - red bell pepper
  • DRESSING
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon dijon mustard
  • 2 cloves garlic
  • 1 pinch salt
