Ingredients
- 19 ounces canned lentils
- 1 cup prepared wild rice
- 2 cups frozen corn or 1 can
- 1 large red pepper, diced
- 1 jalapeño, diced
- 1/4 cup fresh cilantro or parsley
- 1/4 cup chopped green onions
- 1/2 cup crumbled feta cheese
- 3 tablespoons olive oil
- 3 tablespoons cider vinegar
- 2 minced cloves, garlic
- 1 teaspoon salt
- 1/2 teaspoon pepper
How To Make lentil and wild rice salad

Step 1Blend all dressing ingredients ( last 5 listed) and set aside. Combine all salad ingredients and toss with dressing. Refridgerate 1 hour before serving.
