Ingredients

  • 19 ounces canned lentils
  • 1 cup prepared wild rice
  • 2 cups frozen corn or 1 can
  • 1 large red pepper, diced
  • 1 jalapeño, diced
  • 1/4 cup fresh cilantro or parsley
  • 1/4 cup chopped green onions
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons olive oil
  • 3 tablespoons cider vinegar
  • 2 minced cloves, garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

How To Make lentil and wild rice salad

  • Step 1
    Blend all dressing ingredients ( last 5 listed) and set aside. Combine all salad ingredients and toss with dressing. Refridgerate 1 hour before serving.
