Ingredients
- 2 medium tomatoes, diced
- 1/4 - english cucumber (4 inch piece)
- 1/2 - red bell pepper, diced
- 1/4 cup sweet onion, diced
- 1/4 cup flat-leaf parsley, chopped
- 2 tablespoons fresh cilantro, chopped
- 2 - green onions, sliced
- DRESSING:
- 1 tablespoon fresh squeezed lime juice
- 1 tablespoon cider vinegar or rice vinetar
- 2 tablespoons olive oil
- salt & pepper, to taste
How To Make lemony tomato cucumber and herb salad

Step 1Place all the veggie ingredients in a medium glass bowl. Toss to combine.

Step 2Place all the dressing ingredients in a small bowl. Whisk. Taste and adjust seasoning. Pour over the veggies and toss gently to combine, making sure everything is covered in the dressing.

Step 3Cover the bowl with plastic wrap and refrigerate for at least two hours, to allow flavors to meld.
