Lemon Garlic Slaw

No mayonnaise in this slaw - just healthy olive oil and very little of that. Tasty and low calorie.

  •   1 Tbsp
    fresh lemon juice
    zest of one lemon
  •   2 clove
    garlic, finely minced
  •   1
    carrot, shredded
  •   1/2
    red bell pepper, diced
  •   1 medium
    tomato, seeded, diced
  •   1 small
    onion, vidalia, cut into slivers
  •   1 small
    cabbage, shredded
  •   1 pinch
    black pepper, freshly ground
  •   1 pinch
    coarse salt
  •   2 Tbsp
    olive oil, extra virgin

How To Make

    Dice and chop all vegetables as directed. Toss together in a large bowl.
  • 2
    Whisk together the lemon juice, zest, garlic, salt, pepper, and oil. Drizzle over the slaw mixture and toss.

    Serve immediately. If it must be refrigerated do not add the dressing until serving time
