No mayonnaise in this slaw - just healthy olive oil and very little of that. Tasty and low calorie.

fresh lemon juice
zest of one lemon
2 clove
garlic, finely minced
carrot, shredded
red bell pepper, diced
1 medium
tomato, seeded, diced
1 small
onion, vidalia, cut into slivers
1 small
cabbage, shredded
1 pinch
black pepper, freshly ground
1 pinch
coarse salt
2 Tbsp
olive oil, extra virgin

How to Make Lemon Garlic Slaw


  • 1Dice and chop all vegetables as directed. Toss together in a large bowl.
  • 2Whisk together the lemon juice, zest, garlic, salt, pepper, and oil. Drizzle over the slaw mixture and toss.
  • 3Serve immediately. If it must be refrigerated do not add the dressing until serving time
