Ingredients
- 2 cups sliced king oyster mushrooms
- 4 cloves garlic minced
- 1 tablespoon grated ginger
- 4 scallions chopped white and green parts separated
- 1 birds eye chili seeded and chopped
- 3 tablespoons vegetable oil
- 2 tablespoons sugar
- 2 1/2 tablespoons light soy sauce
- 2 teaspoons oyster sauce
- 1/4 teaspoon chinese 5 spice
- cilantro

Step 1Heat a pot of water to boiling. Blanch the mushrooms for 2 minutes then drain and run cold water over to stop the cooking,.

Step 2In a metal bowl add the garlic, ginger, white parts of the scallions, and chilies Bring the oil to a boil over high heat then pour it over the aromatics in the boil. Be careful it will sizzle. Stir in the sugar, light soy sauce, oyster sauce and five spice. Add the green parts of the scallions. Stir to combine.
