This side dish is so lite and refreshing and is only 46 calories!! This goes well with my other recipe Ginger Pork Wraps.

cucumbers
1/4 c
rice vinegar
1 tsp
sugar
1/4 tsp
salt
2 Tbsp
sesame seeds, toasted

How to Make Japanese Cucumber Salad

Step-by-Step

  • 1Peel cucumbers to leave alternating green stripes.Slice the cucumbers in half lengthwise;scrape the seeds out with a spoon.
  • 2Using a knife, cut into very thin slices. While you are doing this you can toast your sesame seeds in a dry nonstick pan, stirring frequently until fragrant and golden. Set aside to cool.
  • 3Combine sugar, salt, rice vinegar in medium bowl stirring to dissolve.
  • 4Add cucumbers and sesame seeds to your rice vinegar mixture;tossing to coat. Serve immediately
