sesame seeds, toasted
1Peel cucumbers to leave alternating green stripes.Slice the cucumbers in half lengthwise;scrape the seeds out with a spoon.
2Using a knife, cut into very thin slices. While you are doing this you can toast your sesame seeds in a dry nonstick pan, stirring frequently until fragrant and golden. Set aside to cool.
3Combine sugar, salt, rice vinegar in medium bowl stirring to dissolve.
4Add cucumbers and sesame seeds to your rice vinegar mixture;tossing to coat. Serve immediately
