italian tomato and bread salad
The old Italian recipes are the best! This one I remember my grandma making for us kids. At the time, we thought it was too ethnic to eat. Today, it is being made everywhere and is absolutely as delicious as I remember it to be.

Ingredients
- 6 - roma tomatoes
- 2 - onions
- 2 tablespoons salt
- 1/4-1/2 cup olive oil
- 1/4 cup water
- 2 teaspoons granulated garlic
- 3 slices ciabatta bread toasted (or day old bread works well)
- 1 teaspoon chopped fresh or dried basil
How To Make italian tomato and bread salad

Step 1Cut up the tomatoes into wedges.

Step 2Cut the onion into diagonal slices

Step 3Add salt and mix together

Step 4Use ¼ cup olive oil drizzled over the tomato mixture (add more if needed to moisten bread)

Step 5Pour in ¼ c water

Step 6Cut the ciabatta bread into chunk pieces and put in the salad

Step 7Add the garlic and basil and mix well.

Step 8Mix it all together until bread is soft and saturated with the olive oil mixture.

Step 9Let the flavors marinate in the refrigerator for about 30 minutes before serving.
