individual layer salad with pea pesto
Easy to make and set in the fridge for a quick lunch. I like to make them in small mason jars and then just grab and top with vinaigrette.

Ingredients
- PEA PESTO
- 2 cups thawed frozen peas
- 2 tablespoons fresh basil
- 2 teaspoons fresh dill
- 2 tablespoons olive oil
- salt and pepper
- VINAIGRETTE
- 2 tablespoons rice vinegar
- 2 tablespoons lemon juice
- 1/2 cup olive oil
- 1 teaspoon granulated sugar
- salt and pepper
- SALAD LAYERS
- 2 cups romaine lettuce, chopped
- 12 grape tomatoes, halved
- 1 English cucumber, sliced
- 1/2 cup sharp cheddar cheese, shredded
How To Make individual layer salad with pea pesto

Step 1For the pesto, place all ingredients in food processor and process until well incorporated.

Step 2For the vinaigrette, place all ingredients in a mason jar. Place the lid on it and shake to mix. Taste and adjust salt and pepper.

Step 3To layer the salad, start with pea pesto on the bottom.

Step 4Then lettuce, tomatoes. cucumbers, and then cheese.

Step 5Drizzle the vinaigrette over the salad when ready to eat.
