imitation crab salad
Imitation crab - some like it, some don't. Personally, I really like it. This is one of my favorite ways to use it. It's a very flavorful combination of imitation crabmeat, mayo, old bay, dill and capers. It's sweet, tangy and creamy with a pop of caper saltiness and a touch of dill. If you're concerned about salt, leave the seasoned salt out of the mix. This salad is delicious on it's own or on a hoagie roll, and in a tortilla or lettuce wrap. Or... just give me a fork and the whole bowl, LOL!

Ingredients
- scant 1/2 cup mayonnaise
- 1/4 teaspoon old bay seasoning
- scant 1/8 teaspoon lawry's seasoned salt
- 1 teaspoon fresh minced dill weed
- 1 teaspoon minced shallot
- 1/2 tablespoon finely grated carrot (1 baby carrot)
- 1/2 tablespoon dill pickle, small dice
- 1/4 cup celery, small dice
- 8 ounces imitation crabmeat (surimi)
- 1 teaspoon drained capers
How To Make imitation crab salad

Step 1Gather and prep all ingredients.

Step 2In a medium size bowl, mix together well, mayonnaise (I recommend Duke's brand,) Old Bay seasoning, Lawry's seasoned salt, dill weed, minced shallot and grated carrot.

Step 3Add diced dill pickle and celery; mix well.

Step 4Chop imitation crabmeat into small bite-size pieces (or shred if you prefer.)

Step 5Add crabmeat to ingredients in bowl; mix well to combine.

Step 6Add capers and gently fold into mixture. Cover and refrigerate until served.
