Ingredients

1 Tbsp
vegetable oil
2
garlic cloves, minced
1/2 tsp
ginger, freshly minced
2
celery stalks, sliced
8 c
chinese cabbage, 1" chunks
1/2 lb
mushrooms, freshly sliced
3/4 c
spinach, trimmed and torn
2 Tbsp
soy sauce

Step-By-Step

1Heat oil in large skillet or dutch oven over medium-high heat.
2Add garlic and ginger; saute until garlic is lightly browned.
3Add celery; stir-fry 2 minutes.
4Add cabbage and mushrooms; stir-fry 2 minutes.
5Add spinach; stir-fry 2 minutes.
6Add soy sauce and toss to coat vegetables; serve immediately.
