- 2 cups cooked barley
- 15 ounces can black beans, rinsed and drained
- 1/2 cup chopped red onion
- 1/2 cup chopped yellow capsicum (bell pepper)
- 1 cup chopped courgette (zucchini)
- 1/2 teaspoon ginger paste
- 1/2 teaspoon minced garlic
- 1/4 teaspoon ground cumin
- 1/4 teaspoon sweet paprika
- 2 tablespoons honey
- 3 ounces extra virgin olive oil
- 2 tablespoons chopped italian parsley
