herring salat (beet salad with herring)

My mom made this every New Years. It is a traditional dish in her part of Germany (near the North Sea) as well as in my dad's region (near the Rhine River). It may be a custom all over Germany, idk. Scandinavian people share a love for this dish at New Years, too. It looks pretty and pink, but don't be fooled - it's not sweet! (I brought some to work for lunch once and a co-worker thought it was some fruit fluff. She was totally grossed out when she found out what it was!!)

Ingredients
- 3 cans sliced beets, drained and chopped (15 oz cans)
- 1 medium apple, peeled, cored and chopped
- 2 medium red potatoes, boiled, peeled, diced
- 2 large dill pickles, finely chopped
- 3-4 ounces pickled herring, finely chopped (either creamy or in wine is fine)
- 4 ounces cooked chicken, finely chopped (left over beef can be used instead)
- 1 tablespoon capers
- 1/2 cup lite mayonnaise
- 1-2 tablespoon stone ground mustard
- 1 - hard boiled egg (for decoration)

Step 1The trick to this is to get everything chopped to be relatively uniform in size. Then just mix everything together. Chill before serving.

Step 2To be extra fancy, make a design with the minced egg white and crumbled egg yolks on top of the salad.
