Hearts of Palm Salad combines tender hearts of palm, red onion, cucumber, cherry tomatoes, and pimento-stuffed green olives in a zesty garlic mustard vinaigrette. We love this delicious, beautiful, healthy salad.

Ingredients

  • FOR THE VINAIGRETTE
  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar
  • 2 teaspoons Dijon mustard
  • 2 cloves garlic, pressed
  • 1/2 teaspoon dried marjoram
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • FOR THE SALAD
  • 2 cans hearts of palm, drained and sliced in 1/4 inch segments (14 oz each)
  • 1/3 cup thinly sliced red onion
  • 1/2 English cucumber, thinly sliced
  • 2 cups cherry tomatoes, halved
  • 1 cup pimento-stuffed green olives, halved
  • 2 tablespoons chopped fresh parsley

How To Make hearts of palm salad

  • Step 1
    Whisk the oil, vinegar, Dijon mustard, garlic, marjoram, salt, and black pepper in a medium bowl or shake the ingredients in a mason jar.
  • Step 2
    Add the hearts of palm, red onion, cucumber, cherry tomatoes, green olives, and parsley to a large serving bowl.
  • Step 3
    Drizzle with the vinaigrette and toss to coat. Cover and marinate for 1 hour in the refrigerator before serving.
