Ingredients
- FOR THE VINAIGRETTE
- 1/4 cup olive oil
- 2 tablespoons white wine vinegar
- 2 teaspoons Dijon mustard
- 2 cloves garlic, pressed
- 1/2 teaspoon dried marjoram
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon freshly ground black pepper
- FOR THE SALAD
- 2 cans hearts of palm, drained and sliced in 1/4 inch segments (14 oz each)
- 1/3 cup thinly sliced red onion
- 1/2 English cucumber, thinly sliced
- 2 cups cherry tomatoes, halved
- 1 cup pimento-stuffed green olives, halved
- 2 tablespoons chopped fresh parsley
How To Make hearts of palm salad

Step 1Whisk the oil, vinegar, Dijon mustard, garlic, marjoram, salt, and black pepper in a medium bowl or shake the ingredients in a mason jar.

Step 2Add the hearts of palm, red onion, cucumber, cherry tomatoes, green olives, and parsley to a large serving bowl.

Step 3Drizzle with the vinaigrette and toss to coat. Cover and marinate for 1 hour in the refrigerator before serving.
