Via Susikochenundbacken blog. I added the nutmeg. One of my favorite summertime cucumber salads!

Ingredients

  • 1 large cucumber, peeled and thinly sliced (original recipe specified english cucumber)
  • 1/2 teaspoon kosher salt
  • DRESSING:
  • 2 tablespoons grapeseed oil
  • 2 tablespoons white vinegar
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper
  • 1 teaspoon spicy brown mustard
  • pinch freshly grated nutmeg (small pinch!)
  • 1 tablespoon honey, softened
  • 1/4 cup sour cream (for best flavor do not use reduced fat sour cream)
  • 1/3 cup red onion, peeled and finely diced
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon fresh chives, finely chopped

How To Make gurkensalat von susi's kochen

  • Step 1
    Peel and slice cucumber and place in a strainer over a bowl. Add 1/2 tsp. Kosher salt, mix with the cucumbers and let sit for about 20 minutes to drain.
  • Step 2
    DRESSING: Whisk oil, white vinegar, cider vinegar, salt, pepper, spicy brown mustard, nutmeg and honey in a small non-reactive bowl until emulsified. Whisk in sour cream, onions, dill and chives.
  • Step 3
    In a *bowl add your drained cucumber and your prepared dressing. Combine and let sit for about 1 hour in the refrigerator before serving. *Non-reactive!
