Gurkensalat von Susi's Kochen



Via Susikochenundbacken blog. I added the nutmeg. One of my favorite summertime cucumber salads!

  • 1 large
    cucumber, peeled and thinly sliced (original recipe specified english cucumber)
  • 1/2 tsp
    kosher salt

  • 2 Tbsp
    grapeseed oil
  • 2 Tbsp
    white vinegar
  • 2 Tbsp
    apple cider vinegar
  • 1/2 tsp
    kosher salt
  • 1/2 tsp
    cracked black pepper
  • 1 tsp
    spicy brown mustard
  • pinch
    freshly grated nutmeg (small pinch!)
  • 1 Tbsp
    honey, softened
  • 1/4 c
    sour cream (for best flavor do not use reduced fat sour cream)
  • 1/3 c
    red onion, peeled and finely diced
  • 1 Tbsp
    fresh dill, finely chopped
  • 1 Tbsp
    fresh chives, finely chopped

How to Make Gurkensalat von Susi's Kochen


  1. Peel and slice cucumber and place in a strainer over a bowl. Add 1/2 tsp. Kosher salt, mix with the cucumbers and let sit for about 20 minutes to drain.
  2. DRESSING: Whisk oil, white vinegar, cider vinegar, salt, pepper, spicy brown mustard, nutmeg and honey in a small non-reactive bowl until emulsified. Whisk in sour cream, onions, dill and chives.
  3. In a *bowl add your drained cucumber and your prepared dressing. Combine and let sit for about 1 hour in the refrigerator before serving.
