Ingredients
- 1 large red onion, cut into 1/2 inch thick rounds
- 3 tablespoons canola oil
- 1 - seedless watermelon, 3-4 pounds, rind removed, cut into 2 inch thick half moons
- 1 cup feta cheese crumbles
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups spinach and arugula
How To Make grilled watermelon salad, mark

Step 1Grill should be direct heating, med-high heat. Brush both sides of onions with 1 tablespoon oil. Grill onions and watermelon 10-12 min. Turn once, done when charred. Remove and let stand 5 min.

Step 2Cut watermelon and onion into manageable chunks, toss into a bowl with feta and salad greens. Combine vinegar and remaining oil. Serve over salad.

Step 3NOTE: I would prefer a berry type vinaigrette salad dressing on top of this salad, and would add roasted or honey roasted pecans...
