  • 1 large
    red onion, cut into 1/2 inch thick rounds
  • 3 Tbsp
    canola oil
  • 1
    seedless watermelon, 3-4 pounds, rind removed, cut into 2 inch thick half moons
  • 1 c
    feta cheese crumbles
  • 2 Tbsp
    balsamic vinegar
  • 1/2 tsp
  • 1/2 tsp
  • 2 c
    spinach and arugula

How to Make Grilled Watermelon Salad, Mark


  1. Grill should be direct heating, med-high heat. Brush both sides of onions with 1 tablespoon oil. Grill onions and watermelon 10-12 min. Turn once, done when charred. Remove and let stand 5 min.
  2. Cut watermelon and onion into manageable chunks, toss into a bowl with feta and salad greens. Combine vinegar and remaining oil. Serve over salad.
  3. NOTE: I would prefer a berry type vinaigrette salad dressing on top of this salad, and would add roasted or honey roasted pecans...
