Ingredients
- FOR THE SHRIMP
- 6 uncooked shrimp peeled and deveined
- 2 teaspoons trader joe's salute seasoning or montrel steak seasoning
- FOR THE WATERMELON
- 1 cup watermelon chunks
- 1/2 teaspoon tajin seasoning
- THE VINAIGRETTE
- 2 tablespoons watermelon balsamic vinegar
- 1 teaspoon water
- 1 tablespoon minced shallots
- pinch of salt
- 2 tablespoons olive oil
- THE SALAD
- favorite greens chopped
- 2 tablespoons crumbled goat cheese
How To Make grilled shrimp & watermelon salad w goat cheese

Step 1Season the shrimp and place on a bambo skewer that has been soaked in water. Set aside.

Step 2Make the viniagrette. Mix the vinegar, water, and shallots together. Whisk in the olive oil and season with salt set aside.

Step 3Sprinkle the watermelon with the tajin and set aside.

Step 4Plate the greens and the goat cheese. Grill the shrimp about 3 minutes per side.

Step 5Drizzle the greens and goat cheese with the viniagrette. Top with the watermelon and then shrimp. Serve
