Great for a light summers lunch. If you can't find watermelon balsamic any fruity balsamic will do or just regular balsamic

Ingredients For grilled shrimp & watermelon salad w goat cheese

  • FOR THE SHRIMP
  • 6
    uncooked shrimp peeled and deveined
  • 2 tsp
    trader joe's salute seasoning or montrel steak seasoning
  • FOR THE WATERMELON
  • 1 c
    watermelon chunks
  • 1/2 tsp
    tajin seasoning
  • THE VINAIGRETTE
  • 2 Tbsp
    watermelon balsamic vinegar
  • 1 tsp
    water
  • 1 Tbsp
    minced shallots
  • pinch of salt
  • 2 Tbsp
    olive oil
  • THE SALAD
  • favorite greens chopped
  • 2 Tbsp
    crumbled goat cheese

How To Make grilled shrimp & watermelon salad w goat cheese

  • 1
    Season the shrimp and place on a bambo skewer that has been soaked in water. Set aside.

    Make the viniagrette. Mix the vinegar, water, and shallots together. Whisk in the olive oil and season with salt set aside.

    Sprinkle the watermelon with the tajin and set aside.
  • 4
    Plate the greens and the goat cheese. Grill the shrimp about 3 minutes per side.

    Drizzle the greens and goat cheese with the viniagrette. Top with the watermelon and then shrimp. Serve
