Ingredients For grilled peach salad with blue cheese & raspberry vinaigrette

  • RASPBERRY VINAIGRETTE
  • 1/2 c
    fresh raspberries
  • 3 Tbsp
    fresh orange juice
  • 1 1/2 tsp
    raspberry vinegar
  • 2 tsp
    sugar
  • 1/4 tsp
    salt
  • 1/4 tsp
    black pepper
  • 3 Tbsp
    olive oil
  • GRILLED PEACHES
  • 3 lg
    peaches, cut in half pit removed
  • 2 Tbsp
    olive oil
  • 2 Tbsp
    honey
  • SALAD
  • 1
    head butter lettuce
  • 1/2 c
    roasted pistachios, shelled
  • 1 c
    blue cheese, crumbled

How To Make grilled peach salad with blue cheese & raspberry vinaigrette

    For the vinaigrette, add the raspberries and orange juice to a blender or small food processor.

    Blend until well incorporated.

    Strain through a fine mesh strainer pushing the juice through. Discard the seeds and solids.

    Add the sugar, olive oil, salt, and pepper. Whisk until emulsified. Set aside.

    For the grilled peaches, get a grill hot. Cut the peaches into wedges. Mix olive oil and honey.

    Brush the olive oil and honey mixture onto the peaches.

    Cook the peaches on the grill turning once to get grill marks.

    To assemble the salad, add the lettuce to the plate. Top with grilled peaches.

    Sprinkle pistachios and blue cheese.

    Drizzle with vinaigrette when serving.
