- RASPBERRY VINAIGRETTE

1/2 cfresh raspberries

3 Tbspfresh orange juice

1 1/2 tspraspberry vinegar

2 tspsugar

1/4 tspsalt

1/4 tspblack pepper

3 Tbspolive oil
- GRILLED PEACHES

3 lgpeaches, cut in half pit removed

2 Tbspolive oil

2 Tbsphoney
- SALAD

1head butter lettuce

1/2 croasted pistachios, shelled

1 cblue cheese, crumbled
How To Make grilled peach salad with blue cheese & raspberry vinaigrette

1For the vinaigrette, add the raspberries and orange juice to a blender or small food processor.

2Blend until well incorporated.

3Strain through a fine mesh strainer pushing the juice through. Discard the seeds and solids.

4Add the sugar, olive oil, salt, and pepper. Whisk until emulsified. Set aside.

5For the grilled peaches, get a grill hot. Cut the peaches into wedges. Mix olive oil and honey.

6Brush the olive oil and honey mixture onto the peaches.

7Cook the peaches on the grill turning once to get grill marks.

8To assemble the salad, add the lettuce to the plate. Top with grilled peaches.

9Sprinkle pistachios and blue cheese.

10Drizzle with vinaigrette when serving.
