Ingredients
- 2 cups fresh cut corn, grilled
- 1 cup red bell pepper, chopped
- 2 tablespoons cheddar cheese, shredded
- 2 tablespoons olive oil, extra virgin
- 2 tablespoons fresh lime juice
- 2 tablespoons cilantro, fresh
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
How To Make grilled corn and fresh pepper salad

Step 1Preheat grill to med-high. Brush grill grate with oil. Grill corn, covered, turning often until kernels begin to char. Transfer to a cutting board to slightly cool.

Step 2Combine olive oil, lime juice, minced cilantro, salt, pepper, and chili powder in a small bowl.

Step 3Cut corn off of the cob and combine it with the chopped red bell pepper.

Step 4Add the lime-cilantro vinaigrette and mix well.

Step 5Add cheddar cheese (crumbled queso fresco may be used instead of cheddar as well).
