2 cfresh cut corn, grilled

1 cred bell pepper, chopped

2 Tbspcheddar cheese, shredded

2 Tbspolive oil, extra virgin

2 Tbspfresh lime juice

1/2 tspsalt

How to Make Grilled Corn and Fresh Pepper Salad
- Preheat grill to med-high.Brush grill grate with oil.
Grill corn, covered, turning often until kernels begin to char. Transfer to a cutting board to slightly cool. - Combine olive oil, lime juice, minced cilantro, salt, pepper and chili powder in a small bowl.
- Cut corn off of cob, chop red pepper and add lime-cilantro vinaigrette. Mix well, add cheese (crumbled queso fresco may be used instead of cheddar as well).
