green pea and cheese salad, my way
This recipe came from a cookbook, but I altered it to make it my own. I have several pea salad recipes, this one with the cheese is good!

Ingredients
- 10 ounces frozen peas
- 1 cup cubed cheddar cheese
- 1/2 cup diced celery (i omit)
- 1/4 cup sliced radishes (eeeww, i omit)
- 2 tablespoons chopped onion (i increase)
- 3 tablespoons sweet pickles (bread & butter)
- 3 hard boiled eggs, chopped
- 1/3 cup mayo (can use mayo or miracle whip, to your preference)

Step 1Thaw peas in colander with cold water, drain well. This keeps them chilled. Add remaining ingredients. Chill 1 hour at least, overnight is much better.
