greek rice salad

Ingredients

  • 1 1/2 cups uncooked rice
  • 2 cups water
  • 2 tablespoons white vinegar
  • 3 1/2 tablespoons olive oil
  • 1 teaspoon oregano, fresh or 1/2 tsp dried
  • 1/4 cup parsley finely chopped
  • 1 clove garlic minced
  • - salt and pepper to taste
  • 10-12 - green and black olives pitted and chopped
  • 1 - head bib lettuce or 12 spinach leafs
  • 1/2 cup feta cheese
  • - optional: 1/2 cup cherry tomatos halved or quartered

How To Make greek rice salad

  • Step 1
    Mix water, vinegar, oil, oregano, parsley, garlic, and salt and pepper in a jar cover and shake well.
  • Step 2
    Combine the cooked rice and chopped olives tomatos in a large bowl.
  • Step 3
    pour the dressing over rice.
  • Step 4
    Arrange leaves of the lettuce or spinache on plates, fill with rice mixture, top with feta.
