Ingredients For greek rice salad

1 1/2 cuncooked rice

2 cwater
-
2 Tbspwhite vinegar
-
3 1/2 Tbspolive oil
-
1 tsporegano, fresh or 1/2 tsp dried

1/4 cparsley finely chopped
-
1 clovegarlic minced
-
salt and pepper to taste
-
10-12green and black olives pitted and chopped
-
1head bib lettuce or 12 spinach leafs
-
1/2 cfeta cheese
-
optional: 1/2 cup cherry tomatos halved or quartered
How To Make greek rice salad

1Mix water, vinegar, oil, oregano, parsley, garlic, and salt and pepper in a jar cover and shake well.

2Combine the cooked rice and chopped olives tomatos in a large bowl.

3pour the dressing over rice.

4Arrange leaves of the lettuce or spinache on plates, fill with rice mixture, top with feta.
