1 1/2 c
uncooked rice
2 c
2 Tbsp
white vinegar
3 1/2 Tbsp
olive oil
1 tsp
oregano, fresh or 1/2 tsp dried
1/4 c
parsley finely chopped
1 clove
garlic minced
salt and pepper to taste
green and black olives pitted and chopped
head bib lettuce or 12 spinach leafs
1/2 c
feta cheese
optional: 1/2 cup cherry tomatos halved or quartered

How to Make Greek Rice Salad


  • 1Mix water, vinegar, oil, oregano, parsley, garlic, and salt and pepper in a jar cover and shake well.
  • 2Combine the cooked rice and chopped olives tomatos in a large bowl.
  • 3pour the dressing over rice.
  • 4Arrange leaves of the lettuce or spinache on plates, fill with rice mixture, top with feta.
