greek garbanzo bean salad
I can't remember where I got this recipe from. I have tried it with different dressings (sun-dried, Italian, balsamic etc.). It's a very versatile salad. Great for pot lucks.

Ingredients
- 2 cans garbanzo beans, drained
- 2 medium english cucumbers, halved lengthwise and diced
- 12 - cherry tomatoes, halved
- 1/2 medium red onion, chopped
- 1 can sliced black olives, drained
- 1 ounce feta cheese, crumbled
- 1/2 cup sun dried tomato dressing
- 1/2 medium lemon, juiced
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
