I can't remember where I got this recipe from. I have tried it with different dressings (sun-dried, Italian, balsamic etc.). It's a very versatile salad. Great for pot lucks.

    garbanzo beans, drained
  • 2 medium
    english cucumbers, halved lengthwise and diced
  • 12
    cherry tomatoes, halved
  • 1/2 medium
    red onion, chopped
  • 1 can(s)
    sliced black olives, drained
  • 1 oz
    feta cheese, crumbled
  • 1/2 c
    sun dried tomato dressing
  • 1/2 medium
    lemon, juiced
  • 1/2 tsp
  • 1/2 tsp
    ground black pepper

How to Make Greek Garbanzo Bean Salad


  1. Toss everything together and refrigerate 2 hours before serving. Keeps well in the refrigerator.
