- 1 small purple onion, finely chopped
- 1/4 cup extra virgin olive oil
- 1/4 cup cider vinegar
- 2 tablespoons dried dill

Step 1For the dressing, mix the oil, vinegar, dill, salt and pepper. Mix well.

Step 2Place the garbonzo beans, tomato, carrots, and onions in a salad bowl. Toss with dressing.
