Ingredients

  • 2 cans garbonzo beans, drained and rinced
  • 3 - carrots, diced
  • 1 large tomato, chopped
  • 1 small purple onion, finely chopped
  • 1/4 cup extra virgin olive oil
  • 1/4 cup cider vinegar
  • 2 tablespoons dried dill
  • - salt and pepper to taste

How To Make garbonzo bean salad

  • Step 1
    For the dressing, mix the oil, vinegar, dill, salt and pepper. Mix well.
  • Step 2
    Place the garbonzo beans, tomato, carrots, and onions in a salad bowl. Toss with dressing.
  • Step 3
    Refrigerate and let the vegetables marinate for several hours or overnight.
