I created this dish by accident when I decided to add a salad next to the Frito Pie I had just created. I found that blending the 2 was a very delicious and refreshing combination!

Ingredients

  • 1 c
    fritos (or your favorite corn chips)
  • 3/4 c
    chile of your choice
  • 3/4 c
    shredded cheddar cheese
  • 1/2 c
    diced onion
  • 4 c
    chopped lettuce, diced tomato, sliced cucumber, etc. (typical salad ingredients)
  • 1/2 c
    ranch dressing

How to Make Frito Pie Salad

Step-by-Step

  1. On a dinner plate, form salad ingredients into a pile in the center of the plate.
  2. Create a round hole in the middle of the salad about 4 or 5 inches in diameter by pushing the salad outward toward the edge of the plate.
  3. Pile the Fritos into the hole and top with half the onions and half of the cheese.
  4. Sprinkle the remaining onions and cheese over the salad and top the Fritos with hot chile.
  5. Drizzle ranch dressing over the entire dish.
