This salad is also referred to as "Peasant Salad". My Lebanese mother served a bowl of this salad at dinner time even if the main course was not a Lebanese dish. I still love the fresh taste of the vegetables and the combination of the mint, garlic and lemon juice soaked bread. YUMMY!

Ingredients
- 1 cup crisp toasted bread (preferably pita) cubed
- 2 small cucumbers (peeled and diced)
- 2 cups shredded lettuce
- 2 medium diced tomatoes
- 1/2 - 1 - finely chopped green peppers
- 1/2 cup chopped green onion
- 1/2 cup finely chopped parsley
- 1/4 cup finely chopped mint (fresh)
- 1/2 cup salad dressing
- SALAD DRESSING
- 1/2 cup lemon juice
- 1/2 cup olive oil
- 2 cloves garlic crushed to a paste
- 1 teaspoon salt
- 1/4 teaspoon pepper
How To Make fattoush

Step 1Place all ingredients in a bowl and toss well.

Step 2For dressing, mix the lemon juice and oil together. Crush the garlic to a paste with the salt and mix it into the oil mixture. Add the pepper. Pour 1/2 cup in the salad mixture and toss well.
