This salad is also referred to as "Peasant Salad". My Lebanese mother served a bowl of this salad at dinner time even if the main course was not a Lebanese dish. I still love the fresh taste of the vegetables and the combination of the mint, garlic and lemon juice soaked bread. YUMMY!

Ingredients For fattoush

1 ccrisp toasted bread (preferably pita) cubed

2 smcucumbers (peeled and diced)

2 cshredded lettuce

2 mddiced tomatoes

1/2 - 1finely chopped green peppers

1/2 cchopped green onion

1/2 cfinely chopped parsley

1/4 cfinely chopped mint (fresh)

1/2 csalad dressing
- SALAD DRESSING

1/2 clemon juice
-
1/2 colive oil
-
2 clovegarlic crushed to a paste

1 tspsalt

1/4 tsppepper
How To Make fattoush

1Place all ingredients in a bowl and toss well.

2For dressing, mix the lemon juice and oil together. Crush the garlic to a paste with the salt and mix it into the oil mixture. Add the pepper. Pour 1/2 cup in the salad mixture and toss well.
