This salad is also referred to as "Peasant Salad". My Lebanese mother served a bowl of this salad at dinner time even if the main course was not a Lebanese dish. I still love the fresh taste of the vegetables and the combination of the mint, garlic and lemon juice soaked bread. YUMMY!

crisp toasted bread (preferably pita) cubed
2 small
cucumbers (peeled and diced)
2 c
shredded lettuce
2 medium
diced tomatoes
1/2 - 1
finely chopped green peppers
1/2 c
chopped green onion
1/2 c
finely chopped parsley
1/4 c
finely chopped mint (fresh)
1/2 c
salad dressing


1/2 c
lemon juice
1/2 c
olive oil
2 clove
garlic crushed to a paste
1 tsp
1/4 tsp

How to Make Fattoush


  • 1Place all ingredients in a bowl and toss well.
  • 2For dressing, mix the lemon juice and oil together. Crush the garlic to a paste with the salt and mix it into the oil mixture. Add the pepper.

    Pour 1/2 cup in the salad mixture and toss well.
