Ingredients
- 2 pounds tofu, firm
- 3 teaspoons prepared mustard
- 1/2 teaspoon celery seed
- 2 1/8 sticks celery
- 3 tablespoons vegenaise mayonaise
- 2 teaspoons tamari sauce
- 1/8 teaspoon ground cumin
- 1/4 teaspoon parsley chopped
- 1/2 teaspoon tarragon chopped
- 1/2 teaspoon paprika for garnish

Step 1Using either a potato masher or a fork, mash the tofu.

Step 2Combine all the other ingredients.

Step 3Add Salt and Pepper to taste.

Step 4If you are on a low fat diet cut back on the mayo, or don't use any.
