egg style tofu salad

Instead of eggs, try this for a change. This would be delicious as a sandwich or in a whole wheat tortilla for breakfast.

Ingredients

  • 2 pounds tofu, firm
  • 3 teaspoons prepared mustard
  • 1/2 teaspoon celery seed
  • 2 1/8 sticks celery
  • 3 tablespoons vegenaise mayonaise
  • 2 teaspoons tamari sauce
  • 1/8 teaspoon ground cumin
  • 1/4 teaspoon parsley chopped
  • 1/2 teaspoon tarragon chopped
  • 1/2 teaspoon paprika for garnish

How To Make egg style tofu salad

  • Step 1
    Using either a potato masher or a fork, mash the tofu.
  • Step 2
    Combine all the other ingredients.
  • Step 3
    Add Salt and Pepper to taste.
  • Step 4
    If you are on a low fat diet cut back on the mayo, or don't use any.
  • Step 5
    Enjoy!
