egg salad a different way
Made this one up on the spur of the moment, Easter Sunday, trying to decide what to do with all the colored eggs! It's a bit reminiscent of a Chef Salad, especially if you throw in some bacon bits.

Ingredients
- 4 - eggs, boiled, peeled, and mashed with a fork
- 1/3 to 1/2 cup ranch dressing, any variety
- 1/2 cup finely grated sharp cheddar cheese
- 1/4 cup chopped green pepper and/or celery (optional)
- 2-3 tablespoons bacon bits (optional)
- - salt and pepper to taste
How To Make egg salad a different way

Step 1Combine the eggs, dressing, cheese, green pepper/celery, and bacon bits if desired. Taste and add salt and pepper if needed.

Step 2Serve on sandwiches or toast, or in tomato cups, or piled inside green pepper rings on lettuce leaves.
