egg salad a different way

Made this one up on the spur of the moment, Easter Sunday, trying to decide what to do with all the colored eggs! It's a bit reminiscent of a Chef Salad, especially if you throw in some bacon bits.

Ingredients

  • 4 - eggs, boiled, peeled, and mashed with a fork
  • 1/3 to 1/2 cup ranch dressing, any variety
  • 1/2 cup finely grated sharp cheddar cheese
  • 1/4 cup chopped green pepper and/or celery (optional)
  • 2-3 tablespoons bacon bits (optional)
  • - salt and pepper to taste

How To Make egg salad a different way

  • Step 1
    Combine the eggs, dressing, cheese, green pepper/celery, and bacon bits if desired. Taste and add salt and pepper if needed.
  • Step 2
    Serve on sandwiches or toast, or in tomato cups, or piled inside green pepper rings on lettuce leaves.
