Egg salad was one of my favorite sandwiches growing up. Nothing fancy...just good! Hubby requested some to take to work..so here it is.. My pictures.

Ingredients

  • 12 - hard boiled eggs
  • 1/4 cup minced onion
  • 1 large pickle diced, or 2 tbsp dill relish, drained well
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon prepared mustard
  • 1/2 teaspoon dried dill
  • 3/4 cup helmanns mayonaisse or your favorite
  • - paprika for garnish

How To Make egg salad

  • Step 1
    Place eggs in a large saucepan. Cover them with cool water by 1 inch. Slowly bring water to a boil over medium heat; when the water has reached a boil, cover and remove from heat. Let sit 12 minutes. Transfer eggs to a colander; place under cool running water to stop the cooking. Eggs can now be peeled.
  • Step 2
    When eggs are cool: I use a grater and grate the eggs on the smallest holes. Will be a fine grate. You can smash them with a fork. I have also used my food processor. Add the next 8 ingredients, stir well. I then taste to see if spices need adjusting.
  • Step 3
    Place in a covered container, and chill till ready to use.
