Egg salad was one of my favorite sandwiches growing up. Nothing fancy...just good!

Hubby requested some to take to work..so here it is..

Ingredients

hard boiled eggs
1/4 c
minced onion
1 large
pickle diced, or 2 tbsp dill relish, drained well
1/2 tsp
salt
1/2 tsp
pepper
1/2 tsp
dry mustard
1/2 tsp
prepared mustard
1/2 tsp
dried dill
3/4 c
helmanns mayonaisse or your favorite
paprika for garnish

How to Make Egg Salad

Step-by-Step

  • 1Place eggs in a large saucepan. Cover them with cool water by 1 inch. Slowly bring water to a boil over medium heat; when the water has reached a boil, cover and remove from heat. Let sit 12 minutes.

    Transfer eggs to a colander; place under cool running water to stop the cooking. Eggs can now be peeled.
  • 2When eggs are cool:

    I use a grater and grate the eggs on the smallest holes. Will be a fine grate. You can smash them with a fork. I have also used my food processor.

    Add the next 8 ingredients, stir well. I then taste to see if spices need adjusting.
  • 3Place in a covered container, and chill till ready to use.
