egg salad
Egg salad was one of my favorite sandwiches growing up. Nothing fancy...just good! Hubby requested some to take to work..so here it is.. My pictures.

Ingredients
- 12 - hard boiled eggs
- 1/4 cup minced onion
- 1 large pickle diced, or 2 tbsp dill relish, drained well
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon dry mustard
- 1/2 teaspoon prepared mustard
- 1/2 teaspoon dried dill
- 3/4 cup helmanns mayonaisse or your favorite
- - paprika for garnish
How To Make egg salad

Step 1Place eggs in a large saucepan. Cover them with cool water by 1 inch. Slowly bring water to a boil over medium heat; when the water has reached a boil, cover and remove from heat. Let sit 12 minutes. Transfer eggs to a colander; place under cool running water to stop the cooking. Eggs can now be peeled.

Step 2When eggs are cool: I use a grater and grate the eggs on the smallest holes. Will be a fine grate. You can smash them with a fork. I have also used my food processor. Add the next 8 ingredients, stir well. I then taste to see if spices need adjusting.

Step 3Place in a covered container, and chill till ready to use.
