easy veggie salad
This Veggie Salad was served at a catered luncheon for a class workshop. I was curious to find out if anyone knew what was in the salad since it was so different and delicious. The surprise was our coordinator provided the veggie salad as a covered dish and not the catering service..... she was so kind to share this recipe with me. It is a SIMPLE, EASY and super MAKE-AHEAD dish.....

Ingredients
- 1 can cut green beans
- 1 can lesueur peas
- 1 can lesueur white shoepeg corn
- 2 cups chopped celery
- 1 small jar pimiento, chopped
- 1 cup chopped onions (optional: 2 cups)
- drain all cans
- MARINADE:
- 1 cup sugar
- 1-1/2 teaspoon salt
- 1 cup vinegar
- 1/2 cup oil
- 1 teaspoon paprika
