I went on a trip to the West Indies last winter. I had the most amazing coleslaw there. I absolutely fell in love with it. What makes this Caribbean coleslaw different? The addition of pineapple juice, coconut, and raisins. It gives it A little something extra. I came up with this version. Which tastes extremely close to the original. I hope you all enjoy it!
