easy apple and cabbage salad

We are getting tired of the same chopped veggie salad so I've been trying to come up with new and different ones. This one is really delicious and can be served over a bed of greens.

Ingredients

  • 3 cups cabbage, shredded
  • 1 can pineapple chunks, drained and cut smaller
  • 2 large apples, either red or green, cut in cubes
  • 1/2 cup currants
  • 2-3 tablespoons vegenaise vegan mayo
  • 1 tablespoon poppy seeds
  • 1 tablespoon xylitol
  • 1 - banana, sliced (optional)
  • 1 - orange, sectioned (optional)
  • 1/2 cup nuts/seeds (walnuts/almonds/etc.)

How To Make easy apple and cabbage salad

  • Step 1
    Prepare all the ingredients as stated and mix together EXCEPT the 1/2 cup nuts and or seeds, save them for a garnish.
