duck hill corn salad

I named this salad after the first place that I ate it. My cousin, Patty, made it for a family reunion in Duck Hill, Mississippi. This salad is fresh and tart.

Ingredients

  • 2 teaspoons mayonnaise
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 cup bell pepper, chopped
  • 1 bunch green onions, chopped
  • 1 can shoepeg corn, drained
  • 1 teaspoon jalapeno pepper juice
  • 1 - tomato, chopped

How To Make duck hill corn salad

  • Step 1
    Combine mayonnaise, salt, black pepper, and jalapeno pepper juice.
  • Step 2
    Combine remaining ingredients except tomatoes.
  • Step 3
    Combine mayonnaise mixture with vegetable mixture. Chill.
  • Step 4
    When ready to serve, add tomato and toss gently. Add more mayonnaise, if needed, to bind ingredients together.
