I named this salad after the first place that I ate it. My cousin, Patty, made it for a family reunion in Duck Hill, Mississippi. This salad is fresh and tart.

Ingredients

  • 2 tsp
    mayonnaise
  • 1/2 tsp
    black pepper
  • 1 tsp
    salt
  • 1/4 c
    bell pepper, chopped
  • 1 bunch
    green onions, chopped
  • 1 can(s)
    shoepeg corn, drained
  • 1 tsp
    jalapeno pepper juice
  • 1
    tomato, chopped

How to Make Duck Hill Corn Salad

Step-by-Step

  1. Combine mayonnaise, salt, black pepper, and jalapeno pepper juice.
  2. Combine remaining ingredients except tomatoes.
  3. Combine mayonnaise mixture with vegetable mixture. Chill.
  4. When ready to serve, add tomato and toss gently. Add more mayonnaise, if needed, to bind ingredients together.
