Ingredients

  • 2 bunches lacinato kale ribs, removed one bunch chopped small the other one broke into chip size pieces
  • 1 jar peppadew peppers, drained and chopped
  • 2 scallions, chopped
  • 1 cup store bought pita chips chopped
  • LEMON VINAIGRETTE
  • 1/4 cup lemon juice
  • salt and pepper
  • 1 tablespoon Dijon mustard
  • 2 tablespoons honey
  • 1/2 cup avocado oil

How To Make double prepared kale salad with peppadew peppers

  • Step 1
    Preheat the oven to 350 degrees F. Place the chip-sized kale on a baking sheet and season with salt. Place in the oven for about 10 minutes until crispy.
  • Step 2
    Mix the lemon juice, salt, pepper, Dijon mustard, and honey. Mix well. Add the oil and mix well.
  • Step 3
    Plate the chopped kale, peppadew peppers, scallions, and Cotija cheese.
  • Step 4
    Drizzle the vinaigrette over the whole thing, then top with the baked kale chips and pita chips.
