We love to keep a bowl of these in the fridge during the spring. They go great with just about any meal.

Ingredients

  • 2 - medium sized cucumbers, sliced
  • 1/2 - onion, thinly sliced
  • 2 cups white vinegar
  • 1 cup water
  • 1 1/2 cups sugar
  • 1 teaspoon celery seed

How To Make cucumbers and onions

  • Step 1
    Sprinkle sliced cucumbers with salt. Let stand 30 minutes, then lightly squeeze and drain water from cucumbers.
  • Step 2
    After draining water from cucumbers, place cucumbers and sliced onions in a large bowl.
  • Step 3
    In a medium saucepan, bring water, vinegar, sugar and celery seed to a boil. Pour mixture over cucumbers and onion. Refrigerate until chilled or overnight.
