Ingredients

  • 1 medium
    cucumber, chopped
  • 1 can
    (8.75 ounces) whole kernel corn, drained
  • 2-3
    fresh tomatoes or 1 can stewed tomatoes, drained & sliced
  • 1
    green pepper, chopped
  • 1
    red pepper, chopped
  • 2 Tbsp
    red wine vinegar
  • 1/2 tsp
    crushed red pepper flakes
  • 1/2 tsp
    garlic, minced
  • 1/2 tsp
    cumin
  • 1/4 tsp
    dried cilantro
  • 1/4 tsp
    salt
  • 1/8 tsp
    ground black pepper

How to Make Cucumber Salad

Step-by-Step

  1. In a large bowl, toss together the cucmber, corn, tomatoes, green bel pepper, red bell pepper, and red wine vinegar.
  2. Season with crushed red pepper flakes, garlic, cumin, cilantro, salt, and black pepper.
  3. Cover and chill for at least 30 minutes before serving.
