Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by Lawanda Patterson

Ingredients
- 1 medium onion, thick sliced
- 4 medium cucumbers, peeled and thick sliced
- 1 1/2 cups vinegar
- 3/4 cup sugar
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 3 tablespoons chopped parsley
How To Make cucumber salad

Step 1Separate thick sliced onions into rings and place onion rings and cucumbers in a bowl.

Step 2Combine other ingredients and mix well; pour over onions and cucumbers.

Step 3Refrigerate at least 3 hours. If too tart, you may add up to 1/2 cup water to dilute it to taste.
