Ingredients For cucumber and carrot salad

  • 3 lg
    cucumbers peeled and seeded
  • 1 lg
    carrot
  • 1 c
    sour cream
  • 1/2 c
    mayo
  • 2 Tbsp
    sugar
  • 1 Tbsp
    garlic minced
  • 1/3 c
    olive oil
  • 1/4 c
    lemon juice
  • 1/4 c
    fresh dill minced
  • salt and pepper

How To Make cucumber and carrot salad

  • 1
    Grate the cucumbers on a box grater. Place in a few pieces of paper towel and squeeze out most of water. Shred the carrot. Place in large bowl

    Mix the remaining ingredients together. Pour over the carrots and cucumbers and mix well. Let sit in refrigerator until well chilled about 4 hours.
