~ crunchy crab salad for 2 ~
I used what I had on my refrigerator for this yummy salad and the addition of cauliflower was a wonderful addition. It gave a wonderful crunch to the salad, hence the name. This salad can be doubled or tripled easily for your needs. Goes great as a side to a burger or as a meal itself. We loved it! Enjoy!

Ingredients
- 8 ounces imitation crab meat, chopped or fresh
- 1/2 cup frozen sweet peas, thawed
- 1/2 cup fresh cauliflower, chopped
- 1/4 medium red onion, minced
- 1/4 cup celery, small chopped
- 1/4 - 1/2 cup shredded cheddar cheese
- 1/2 teaspoon old bay seasoning or to taste
- 1/2 cup plus 2 tablespoons - real mayonnaise
- 1/4 teaspoon black pepper

Step 1In a medium bowl, add chopped crab, onion, celery, seasonings, peas, cauliflower and cheese. Toss together and fold in the mayonnaise. You may want more or less mayonnaise, up to you. My proportions were just right for our taste. Sprinkle the top with more bay seasoning and chill for at least an hour so the flavorings can permeate.
