Ingredients

  • 1 bag *texas toast* croutons, seasoned or butter&garlic flavor
  • 1 medium cucumber, seeded and medium diced
  • 1 large very ripe tomato, washed, cored and medium diced
  • 2 - shallots or 1/2 very small onion, fineley diced
  • 3-4 sticks string cheese, sliced into med-thick rounds
  • 1/3 cup red wine vinegarette
  • 1/2 teaspoon sea salt and fresh ground black pepper, to taste

How To Make crouton salad

  • Step 1
    in a small bowl, combine all the diced veggies, add S&P and vinegarette. let marinate at room temp at least 15 mins.
  • Step 2
    in larger bowl, toss croutons and sliced cheese, then pour marinated veggies over crouton mixture. stir well to coat the bread and cheese. let stand an additional 10 mins for bread to absorb marinated juices.add additional vinegarette if desired.
  • Step 3
    PS you can add any other of your fave veggies, diced, if desired, also to make a complete dinner salad, add white meat chicken or tiny salad shrimp
