creamy cucumbers

My Great Aunt taught me this recipe when she was visiting one summer. It is super easy and I have never written it down just because I have always remembered it. My husband asks for this all the time!

Ingredients

  • 2 large cucumbers
  • 3 scoops of mayonnaise
  • - salt and pepper

How To Make creamy cucumbers

  • Step 1
    Nothing is really measured, it depends on how much you want to make, for a family of four I start with 2 pretty good sized cucumbers. I peel and slice thin into a medium bowl.
  • Step 2
    I than add 3 good scoops of mayonnaise with a tablespoon. Season with salt and pepper. Mix to coat the cucumbers well. I add a little more salt and pepper at this time. I like to see the pepper floating in the sauce when it's done.
  • Step 3
    Cover and refrigerate several hours. Stir a couple of times while it's refrigerating. After several hours the mayonnaise will become creamy and the cucumbers are softer. Serve.
  • Step 4
    You can use more cucumbers and mayonnaise for more people.
