creamy cucumber salad - north german version

My mom always made cucumber salad like this. Known as Gurken Salat in German! My mom always used mayo. If you want to take the time, you can sprinkle the cuke/onions with salt and let sit for an hour or so and drain off the excess liquid before adding dressing. I'm never that patient.

Ingredients For creamy cucumber salad - north german version

  • 1
    cucumber
  • 1/2 c
    white or red onion, thinly sliced
  • 1/4 c
    sour cream, plain yogurt or light mayonnaise
  • 2 Tbsp
    vinegar
  • 1/2 tsp
    sugar or Splenda (optional)
  • 1/2 tsp
    dried dill
  • salt and pepper, to taste

How To Make creamy cucumber salad - north german version

    Peel cucumber, if desired. Thinly slice into a bowl. Thinly slice onions, cut slices in half, and add to cucumbers.

    Mix together sour cream, vinegar, sugar/Splenda, and dill.

    Pour over cukes and onions. Taste for and adjust salt and pepper.
