creamy coleslaw

This is yet another Creamy Coleslaw recipe. In this version, I have used Mayo with olive oil, to help reduce the fat content. You could probably switch to 2% milk and substitute Splenda for the sugar, if you wanted to try that too. Hope you enjoy. This goes together very quickly. I use the pre-packaged shredded cabbage.

Ingredients
- 2 packages cabbage, shredded 10 ounces each
- 1 - carrot, shredded
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground pepper
- 1/2 cup mayonnaise, with olive oil
- 1/3 cup milk
- 1/4 cup buttermilk
- 2 1/2 tablespoons lemon juice
- 1 1/2 tablespoons white vinegar
- 1/2 - white onion, diced finely
- 1/4 teaspoon celery seed
How To Make creamy coleslaw

Step 1Combine cabbage and carrot in a large bowl.

Step 2Whisk together sugar and next 9 ingredients until blended, toss with vegetables.

Step 3Cover and chill at least 2 hours.
