This is yet another Creamy Coleslaw recipe. In this version, I have used Mayo with olive oil, to help reduce the fat content. You could probably switch to 2% milk and substitute Splenda for the sugar, if you wanted to try that too. Hope you enjoy. This goes together very quickly. I use the pre-packaged shredded cabbage.

Ingredients

  • 2 packages cabbage, shredded 10 ounces each
  • 1 - carrot, shredded
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 1/2 cup mayonnaise, with olive oil
  • 1/3 cup milk
  • 1/4 cup buttermilk
  • 2 1/2 tablespoons lemon juice
  • 1 1/2 tablespoons white vinegar
  • 1/2 - white onion, diced finely
  • 1/4 teaspoon celery seed

How To Make creamy coleslaw

  • Step 1
    Combine cabbage and carrot in a large bowl.
  • Step 2
    Whisk together sugar and next 9 ingredients until blended, toss with vegetables.
  • Step 3
    Cover and chill at least 2 hours.
