Ingredients

  • 4 cups favorite greens
  • 4 tablespoons favorite vinaigrette, like lemon
  • 1/2 pound crab meat
  • 3 tablespoons Thousand Island dressing
  • 1 tablespoon chives
  • 1 tomato, diced
  • 2 teaspoons red onion, diced
  • 2 tablespoons olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch sugar
  • 2 teaspoons parsley, minced
  • 1 avocado, peeled and sliced

How To Make crab louie salad

  • Step 1
    Dress the greens with the vinaigrette. Divide among 4 plates.
  • Step 2
    Place the crab meat in a bowl. Mix in the Thousand Island dressing, and chives. Set aside.
  • Step 3
    Mix the tomato, red onion olive oil, salt, pepper, parsley, and sugar.
  • Step 4
    Top a spoonful of the crab mixture on top of each plate of greens. Top with sliced avocado.
  • Step 5
    Finish with the tomato mixture and serve.
