Country Garden Salad

This is simple and easy to make. It will add some great flavor to your meal in a healthy way!

Ingredients

  • 3 Tbsp
    lemon juice
  • 2 Tbsp
    extra virgin olive or canola oil
  • 3/4 tsp
    salt
  • 1/4 tsp
    black pepper
  • 1 lg
    seedless or seeded cucumber
  • 1 pt
    grape or other very small tomatoes, cut into halves
  • 3/4 c
    thinly sliced scallions
  • 1/2 c
    chopped fresh parsely (or less if using dried parsley)
  • 1 Tbsp
    chopped fresh mint (optional)

How To Make

  • 1
    Whisk together the wet ingredients, until well blended.
  • 2
    Add remaining ingredients. Toss well. This can be chilled for a few hours before serving, or served immediately.
