Ingredients
- 3 tablespoons lemon juice
- 2 tablespoons extra virgin olive or canola oil
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large seedless or seeded cucumber
- 1 pint grape or other very small tomatoes, cut into halves
- 3/4 cup thinly sliced scallions
- 1/2 cup chopped fresh parsely (or less if using dried parsley)
- 1 tablespoon chopped fresh mint (optional)
