cottage cheese salad
When I was younger my mother would make this during the summer when tomatoes were abundant. We'd have this as a side to steak, pork chops, fish or chicken that had been grilled. Every time I make this now my family loves it as much as I did when my mom made it.

Ingredients
- 1 medium cottage cheese, small curd
- 1 large tomato (diced)
- 2 - spring onions
- 1/4 cup mayonnaise
- - salt and pepper to taste
How To Make cottage cheese salad

Step 1In a medium bowl mix the cottage cheese with tomatoes, finely chopped onions, mayonnaise, salt and pepper. After combining all ingredients, let set in the refrigerator for at lease an hour for the flavors to blend well.
